Sparkling dry white wine

An excellent wine obtained from the careful pressing of the single variety white “Spergola” grape, a local variety coming from a small production area on the hills of Scandiano, known in the local area since 1400. 
The slow second fermentation process uses the long Charmat method.
After fermentation, the wine is left to rest on the yeast for around 6 months, giving it a fine, persistent perlage. 
The bouquet offers sophisticated hints of flowers, bread crusts and yeasts, while the flavour is long, fresh and sapid on the palate. 
Ideal for aperitifs and hors d’oeuvres, it makes an excellent companion for sliced meats and cheeses, as well as fish dishes.
Produced in limited quantities.


Serving temperature: 6-8 °C.
